Wheat Bread is a good food experience for the WH sound. Children love to see the wheat ground into flour.
Whole Wheat Bread or Rolls
Put ingredients in a large bowl or bread mixer bowl in the order listed. ( Yes, the yeast and water is last.)
- 1 to 2 T. salt
- 9 C. whole wheat high protein flour (6 c. of white wheat ground makes about 9 c. flour, if you have a wheat mill.)
- ½ C. gluten flour
- 3/4 C. expeller-pressed oil or other good oil (Can use olive oil or half applesauce.)
- ½ C. Molasses, honey or mixture of both
- 1 T. lecithin (granules or liquid)
- 2 T. SAF instant yeast or some other instant yeast
- Add just enough water to make a soft dough–3 ½ to 4 ½ C. warm water (warm, not hot, not cold, when poured over wrist)
Start mixing with a bread mixer, wooden spoon, metal spoon or strong spatula. Depending on the humidity it may take more or less water. Keep the dough soft. A soft dough will make a better bread. As you mix it should start to clean the sides of the bowl. Once it starts to be mixed start using your hands to knead the dough if you are using a spoon. If you are kneading by hand, keeping your hands wet will keep the dough from sticking to your hands. Mix or knead for about 8 minutes. Leave in the bowl or put dough on a floured surface. Cover with a clean light weight dish towel. Let it rise for about 15 minutes.
Shape into loaves or rolls. (3 large or 4 small) Children like to make rolls. Cover with light towel and let rise in a warm place for about 15 minutes or until double in size. Preheat oven to 350 degrees and bake for 30 to 40 minutes (20 minutes for rolls) or until golden brown and hollow-sounding when thumped.
(Using good oil will make the bread taste better and add healthy oil soluble vitamins. Olive oil will give the bread a slight olive oil taste. Keep expeller- pressed oil in your refrigerator. )
* Use olive oil in the dough to make a great pizza crust.
