Banana Muffins

Banana Muffins

  • Mash 5 bananas and set aside.
  • Mix 3/4 c. butter, 2/3 c. brown sugar and  2/3 cup applesauce.
  • Mix and add 3 eggs. 
  • Mix and add 3 c. flour, 1 t. salt, 1 t. soda
  • Mix in mashed bananas.
  • Fill greased muffin pans.
  • Cook at 350 degrees for about 20 minutes.
  • Serve with butter.

Makes 24 muffins.

This is fun to make with children.  Have them help read the recipe.

Oodles of Noodles

Oodles of Noodles  (2 kinds)        20150310_161410

Fast Noodles  (Can be made with gluten-free noodles.)  Children love this.

  1. Cook 1/2 lb. curly or other noodles for half of the time on the package.
  2. Save 1/2 cup of the water and drain off the rest. Put the noodles and 1/2 c. water back in the pan.
  3. Add 1 cup of frozen petite peas, a little salt, and 1 Tablespoon chicken bouillon paste or granules.  (Better than Bouillon  is a great bouillon.)
  4. Cook on low with a lid for about 5-6 minutes, then take it off the burner and leave it for 10 or more minutes.
  5. Eat and enjoy!
  6. Fun to do when learning the OO sound like in MOON.

Homemade Noodles

  • Beat 1 egg.
  • Add: 1/2 t. salt
  • 2 T. milk.
  • Stir in 1 cup of flour.      (dough will be stiff)
  • Roll dough thin on a floured board.
  • Let rest for 30 minutes.
  • Heat to boiling:  4 cups water
  • Then add: 4 t. bouillon paste or granules, 2 t. minced onions, and 2/3 cups peas and carrots.
  • Add noodles to broth.
  • Cook on low boil for 15 minutes.  Enjoy!
  • Fun to cook when learning the Long OO sound.

Pioneer Scones

Pioneer Scones

Make your favorite bread dough or thaw out frozen bread/roll dough.  (Look at the Grandma’s Egg Bread (Orange Rolls) and Wheat Bread recipes on this blog.)

When the dough is ready:

  • Heat about a 1/2 inch of oil (expeller pressed prefered) in a heavy frying pan.  Don’t let the heat get too high and burn the oil.
  • Roll the dough out and cut with a knife into about 3 x 2 inch pieces.
  • Fry the dough until it is brown on both sides.
  • Cool for a few minutes on a paper towel.
  • Then serve with Honey Butter.   (Mix with a fork 1 cube of soft butter with about 1/2 cup of honey.)

Fresh Air Cookies

(Fun to make when teaching the AIR sound.  This is fun to eat outside in the fresh air.)

1. Mix:

  • 2 cubes Butter
  • 3 cups Brown Sugar

2. Mix in:

  • ½ cup Applesauce
  • 2 teas. Vanilla
  • 3 Eggs

3. Combine and mix in:

  • 3 cups Flour (part whole wheat flour)
  • 1 teas. Baking Soda
  • ½ teas. Salt

4. Mix in on low:

  •  2 cups regular Oatmeal
  •  ½ -12 oz bag of Chocolate Chips

5. Drop onto a greased cookie sheet.

6. Bake at 375 for 10 minutes.

7. Eat outside in the Fresh Air.

Granola

Granola

 

Heat the oven to 300 F with the rack in the middle.

Place in a large bowl and mix:

  • 3 cups rolled oats (not quick oats)
  • 1/4 cup almond flour or regular flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Place in a pan and warm to melt:

  • 1/3 cup honey
  • 1/4 cup coconut oil

Put 1/4 cup pure maple syrup or 1 teaspoon vanilla in the honey/oil mixture. 

Then pour over the oats mixture and mix.

Spread the mixture on a rimmed cookie sheet lined with parchment paper.

Bake for 15 minutes then stir.  Bake for 5 to 10 more minutes until lightly brown around the edges.

Place on a rack to cool.

Add about 1/2 cup of dried fruit (cranberries, cherries, raisins, dates) and about 1/2 cup of nuts or seeds (I prefer pecans.)   I also add about a 1/2 cup of ribbon coconut.

Stir every 15 minutes as it cools to break up the clumps.

Store in airtight container.

Enjoy!   We like it with Cashew Milk.  

 

Pancakes

 1.    Mix with a whisk:

  •  2 cups flour (whole grain is best)
  •  1 teaspoon salt
  •  1 teaspoon baking powder

 2.   Heat frying pan on medium heat.

 3.    Mix in with a whisk:

  •  about 2 cups of water or milk
  •  2 eggs
  •  1/2 cup oil or applesauce
  •  2 Tablespoons honey

 4.    The pan is ready for pancakes when you sprinkle a little water with your fingers in the pan and the water dances. Cook pancakes.

 5.    Eat with syrup, applesauce, honey/butter or cinnamon sugar.  It is fun to try new toppings for pancakes.

 6.    Enjoy!

Bean Soup (Ten Minute Meal)

We are reposting these fast and easy meals.

Bean Soup    (First of 10 Ten Minute Meals) 

Brown 1 pound of ground beef in a large pot.

Cook ½ cup chopped onion and ½ cup chopped celery with meat or add 1 T. onion flakes.

Add:

  • 2 or 3 cans of minestrone soup
  • 2 cans of water
  • 1 can of pork and beans
  • 1 or 2 cans kidney beans
  • 1 can green beans
  • 1 t. Worcestershire sauce
  • 1 t. oregano

Simmer until everything is warm.

(About 8 minutes. )

Can be served with cheese, bread and carrot sticks.

* Tip!   Brown several pounds of ground beef, some chopped onion and garlic together, then freeze in small containers to use in fast meals.)

Math Lesson Ideas for the Number 2 (two)

Objective:  Help children recognize the number 2 and the word “two”, numbers are used for counting, count 2 objects, learn to write “2” and “two”.

Preparations:

  • Find an art print or picture from a calendar or magazine with good examples of “TWO”.
  • Optional:  Have connecting blocks or die-cut paper apples in two colors.
  • Have stickers.
  • Write the number “2” and the word “two” on a word card.  Use the “1 one “ word card from the “ONE” lesson.
  • Decide on a simple book, poem or nursery rhyme that has good examples of two.  Possibly use, “One, Two, Buckle my Shoe”.  (Included at the end.)
  • Have colored paper and pencil for each child.

Lesson Ideas:

  • Display the word card with “2 two”.  Discuss the difference between the number “2” and the word “two”.  Compare to the number “1 one” card.
  • Read a simple book or poem.  Discuss the examples of two. Discuss different body parts to see how many they have.  Do you have two legs?  two eyes? Etc.
  • Show the picture and have each child pick out two things in the picture.
  • Show how to make the number 2.  Have them make them in the air with their finger.  Have them close their eyes and write the number 2 in the air.
  • Give each child a paper and pencil.  Have or help them write their name.  Show the word card again for “2 two”.  Have them write a number “2” several times, and the word “two”.  (If a child has a hard time writing their letters, write the word “two” with a yellow pencil and have them trace it.)  Put out stickers and have them select 2 for their paper.  (They could also draw two things.)

Extension ideas:  Possibly include some comparison or patterning activities with connecting blocks or die-cut apples.  (small, medium, large, same, different, AABB pattern, etc.)

Nursery Rhyme:
One, two, Buckle my shoe;
Three, four, Shut the door;
Five, six, Pick up sticks;
Seven, eight, Lay them straight;

  • Optional:  Make some die cuts of apples or something else in two different colors and 3 different sizes.
  • Have some stickers.
  • Write the number “l” and the word, “one” on a word card.
  • Have examples of the different fonts of the printed form of 1.
  • Decide on a simple book, poem or nursery rhyme that has good examples of “one”.  Possibly use, “There Was a Crooked Man”.  (Included at the end.)
  • Have paper and pencil for each child.

Lesson:

  • Display the word card with “l one”.  Discuss the difference between the number “1” and the word “one”.  What are words made of?  (letters)  What are numbers used for?  (counting)
  • Read  a book, poem or the Nursery Rhyme.  Then discuss the examples of one thing in the reading. Discuss different body parts to see how many they have.  Do you have 1 eye?  1 nose? Etc.
  • Show the picture and have each child pick out one thing in the picture.
  • Show the children examples of different fonts for the number one.  Encourage them to write their l’s with a straight line like an “l”.  Have them make them in the air with their finger.
