Fresh Air Cookies

Fresh Air Cookies      HPIM1518 

(Fun to make when teaching the AIR sound.  This is fun to eat outside in the fresh air.)

1. Mix:

  • 2 cubes Butter
  • 3 cups Brown Sugar

2. Mix in:

  • ½ cup Applesauce
  • 2 teas. Vanilla
  • 3 Eggs

3. Combine and mix in:

  • 3 cups Flour (part whole wheat flour)
  • 1 teas. Baking Soda
  • ½ teas. Salt

4. Mix in on low:

  •  2 cups regular Oatmeal
  •  ½ -12 oz bag of Chocolate Chips

5. Drop onto a greased cookie sheet.

6. Bake at 375 for 10 minutes.

7. Eat outside in the Fresh Air.

Cook No-Bake Cookies

Cook No-Bake Cookies

1.     Mix together in a large pan or glass bowl:

  • 1 ½ c. brown sugar
  • 1 stick butter
  • ½ c. milk
  • 1/3 c. cocoa

2.      Cook and stir over medium heat until it boils or cook in the microwave.

3.     Remove from the heat.

4.      Stir in:

  • 2 t. vanilla
  • 2/3 c. peanut butter
  • 3 c. quick oats

5.    Drop on wax paper.

6.    Let cool and eat.

Simple and fun to do with children.  A great recipe to use when learning the short OO sound.

MiXed Pumpkin Cookies for the X sound

MiXed Pumpkin Cookies

1. MiX:

  • ½ cup oil or butter
  • 1 ½ cups brown sugar
    1 egg
    1 tsp. vanilla
    1 cup pumpkin

2. MiX:

  • 2 ½ cups flour
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    ½ tsp. nutmeg
    ½ tsp. salt

3. MiX:     ½ bag of Chocolate Chips

4. Drop on greased cookie sheet.

5. Bake at 350 for 12-15 minutes. Cool!

6. Frost with Frosting or eat plain. Enjoy!

Cream Cheese Frosting (Optional)
Mix or beat 8 oz. cream cheese – softened, 1 stick of butter- softened, 2 T. milk, 1 t. vanilla and
About 3 cups of powdered sugar until it is thick and smooth.

Zucchini Muffins

1. Grate:

  • 2 cups zucchini
  • 1 teas. grated lemon peel

2.  Add and mix:

  • 4 eggs
  • ½ cup oil
  • 1 cup brown sugar

3. Add and mix:

  • 3 cups flour
  • 2 teas. baking powder
  • 1 teas. salt
  • 1 teas. cinnamon

4.  Scoop into greased muffin tins.

5.  Bake at 400 for 20 minutes.

WH for Wheat Bread

DSC_7520Wheat Bread is a good food experience for the WH sound.  Children love to see the wheat ground into flour.

Whole Wheat Bread or Rolls

Put ingredients in a large bowl or bread mixer bowl in the order listed.  ( Yes, the yeast and water is last.)

  • 1 to 2 T. salt
  • 9 C. whole wheat high protein flour (6 c. of white wheat ground makes about 9 c. flour, if you have a wheat mill.)
  • ½ C. gluten flour
  • 3/4 C. expeller-pressed oil or other good oil (Can use olive oil or half applesauce.)
  • ½ C. Molasses, honey or mixture of both
  • 1 T. lecithin (granules or liquid)
  • 2 T. SAF instant yeast or some other instant yeast
  • Add just enough water to make a soft dough–3 ½ to 4 ½ C. warm water (warm, not hot, not cold, when poured over wrist)

Start mixing with a bread mixer, wooden spoon, metal spoon or strong spatula.  Depending on the humidity it may take more or less water.  Keep the dough soft.  A soft dough will make a better bread.  As you mix it should start to clean the sides of the bowl.  Once it starts to be mixed start using your hands to knead the dough if you are using a spoon.  If you are kneading by hand, keeping your hands wet will keep the dough from sticking to your hands.  Mix or knead for about 8 minutes.  Leave in the bowl or put dough on a floured surface.  Cover with a clean light weight dish towel.  Let it rise for about 15 minutes.

Shape into loaves or rolls. (3 large or 4 small) Children like to make rolls. Cover with light towel and let rise in a warm place for about 15 minutes or until double in size.  Preheat oven to 350 degrees and bake for 30 to 40 minutes (20 minutes for rolls) or until golden brown and hollow-sounding when thumped.

(Using good oil will make the bread taste better and add healthy oil soluble vitamins.  Olive oil will give the bread a slight olive oil taste.  Keep expeller- pressed oil in your refrigerator. )

* Use olive oil in the dough to make a great pizza crust.

Ranch Dressing- Simple and Tasty

Ranch Dressing

  •  1 tsp. dry parsley
  •  ½  tsp. garlic powder
  •  1 tsp. salt
  • 1 ½  tsp. instant minced onion
  •  1 tsp. pepper
  • pinch of oregano

Mix spices with 2 cups of buttermilk.  Then add 1½ – 2 cups of mayonnaise. Chill in the refrigerator for 30 min. (Will keep refrigerated for several weeks.)

Banana Muffins

Banana Muffins

  • Mash 5 bananas and set aside.
  • Mix 3/4 c. butter, 2/3 c. brown sugar and  2/3 cup applesauce.
  • Mix and add 3 eggs. 
  • Mix and add 3 c. flour, 1 t. salt, 1 t. soda
  • Mix in mashed bananas.
  • Fill greased muffin pans.
  • Cook at 350 degrees for about 20 minutes.
  • Serve with butter.

Makes 24 muffins.

This is fun to make with children.  Have them help read the recipe.
