Stir-Fry (Ninth of 10 Ten Minute Meals)
Cook rice, linguine, or angel hair pasta with salt, while the stir-fry is cooking. When it is cooked drain and add a little olive oil.
Stir-Fry
- Cut 1 or 2 chicken breasts or thighs into medium-size pieces. (Can use pork, or beef.)
- Start browning chicken in olive oil in a large frying pan.
- Add about ½ of an onion, chopped and cover with a lid and cook over medium heat for 1-2 min.
- Add 2 or 3 thinly sliced carrots, cover and cook for about 2 more minutes.
- Then add broccoli, sliced zucchini and/or any other veggies, cover and cook for about 2 more minutes.
- Add seasoning to taste.
- After about 2 minutes add 1 cup of cold chicken broth or water mixed with 2 T. of corn starch and 1 T. soy sauce. Cook, stirring often, until sauce thickens. (1 or 2 minutes) If it doesn’t thicken add a little more corn starch mixed with a little cold water.
- Serve on drained pasta or rice and dinner is ready.
Note: It is also good served without pasta or rice.

Fresh Air Cookies
(Fun to make when teaching the AIR sound. This is fun to eat outside in the fresh air.)
1. Mix:
- 2 cubes Butter
- 3 cups Brown Sugar
2. Mix in:
- ½ cup Applesauce
- 2 teas. Vanilla
- 3 Eggs
3. Combine and mix in:
- 3 cups Flour (part whole wheat flour)
- 1 teas. Baking Soda
- ½ teas. Salt
4. Mix in on low:
- 2 cups regular Oatmeal
- ½ -12 oz bag of Chocolate Chips
5. Drop onto a greased cookie sheet.
6. Bake at 375 for 10 minutes.
7. Eat outside in the Fresh Air.

Granola
Heat the oven to 300 F with the rack in the middle.
Place in a large bowl and mix:
- 3 cups rolled oats (not quick oats)
- 1/4 cup almond flour or regular flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Place in a pan and warm to melt:
- 1/3 cup honey
- 1/4 cup coconut oil
Put 1/4 cup pure maple syrup or 1 teaspoon vanilla in the honey/oil mixture.
Then pour over the oats mixture and mix.
Spread the mixture on a rimmed cookie sheet lined with parchment paper.
Bake for 15 minutes then stir. Bake for 5 to 10 more minutes until lightly brown around the edges.
Place on a rack to cool.
Add about 1/2 cup of dried fruit (cranberries, cherries, raisins, dates) and about 1/2 cup of nuts or seeds (I prefer pecans.) I also add about a 1/2 cup of ribbon coconut.
Stir every 15 minutes as it cools to break up the clumps.
Store in airtight container.
Enjoy! We like it with Cashew Milk.

Creamy Milk Sauce/Gravy/Soup/Rue (Seventh of 10 Ten Minute Meals)
If you learn to make a Rue it can save you money and time. Use it anytime you would use a can of creamed soup. It is better for your health, saves you money, and tastes great. It will make you holiday meals the best. Be brave. Don’t worry if you have a few lumps the first time, it will still taste great.
If you use it in a recipe instead of a can of creamed soup, use only half of the liquid.
- Melt 2 Tbs. butter or other fat in frying pan.
- Add 2-3 Tbs. flour and brown for 1-2 minutes on medium heat.
- Add 2 cups of a mixture of milk, water and/or broth.
- Season with salt/pepper and spices to taste.
- Stir until thick.
- Turn the heat off and add 2-4 Tbs. of grated parmesan cheese.
Hamburger Gravy
Add cooked ground beef to the gravy and serve over toast, noodles, rice, or potatoes.
Veggie Gravy
- Add steamed asparagus or other cooked vegetables and serve over toast.
- Add some cooking water to the sauce to make the right thickness.
Creamed Soup
- Cook any vegetables like carrots, potatoes, broccoli, onions, etc.
- Drain and save the water to use to thin the soup.
- Add the creamed sauce.
- Add the reserved water to make the soup the right thickness.
This can be used to make chicken pot pie, potato soup, stroganoff and so much more. Let us know how you use a rue to make your meals great.

Pancakes
1. Mix with a whisk:
- 2 cups flour (whole grain is best)
- 1 teaspoon salt
- 1 teaspoon baking powder
2. Heat frying pan on medium heat.
3. Mix in with a whisk:
- about 2 cups of water or milk
- 2 eggs
- 1/2 cup oil or applesauce
- 2 Tablespoons honey
4. The pan is ready for pancakes when you sprinkle a little water with your fingers in the pan and the water dances. Cook pancakes.
5. Eat with syrup, applesauce, honey/butter or cinnamon sugar. It is fun to try new toppings for pancakes.

Fast Chili (Third of 10 Ten Minute Meals) This can be used in many simple meals.
- Brown 1/2 –1 lb of ground beef with onion and garlic.
- Add 1 or 2 cans of chili beans and heat and serve. (Can use any beans seasoned with chili powder, cumin, garlic instead of chili beans. )
Can be enjoyed with toast, crackers, cheese, and/or veggies.
Use Chili to make any of these fast meals and snacks:
Chili Cheese Chip
- Put chips on a plate,
- Sprinkle grated cheese on top,
- Put chili on top.
- Microwave until warm.
Chili Cheese Dip
- Microwave heat on low in a pan, one cup of grated cheese and about 1 cup of chili for 1 minute.
- Stir and serve with chips.
Chili Quesadilla
- Butter a frying pan.
- Put in a tortilla,
- then grated cheese ,
- then top with another tortilla.
- Then brown on both sides.
- Top the quesadilla with warm chili.
Baked Potato Bar
- Bake potatoes in microwave (9 min) or oven.
- Steam broccoli.
- Warm chili.
- Cut up cooked ham or cook and crumble bacon.
- Grate cheese.
- Serve with butter, sour cream, salt and pepper.
- Pile on potatoes and enjoy.

Breakfast Sandwiches (Second of 10 Ten Minute Meals)
Brown bacon, ham or sausage.
Toast bread
Fry 1 or 2 eggs per sandwich. (When cooking eggs use a lid to help steam the eggs.)
Put a small slice of cheese (any kind) on the eggs during the last minute of cooking.
Slice tomatoes.
Put cream cheese, mayo or butter on the toast.
Put sandwich together in this order:
- Toast
- 2 eggs with cheese melted on
- Sliced tomatoes, salt and pepper
- Meat
- Toast
Can be served with milk, fruit or juice.
This makes a great dinner or brunch.

We are reposting these fast and easy meals.
Brown 1 pound of ground beef in a large pot.
Cook ½ cup chopped onion and ½ cup chopped celery with meat or add 1 T. onion flakes.
Add:
- 2 or 3 cans of minestrone soup
- 2 cans of water
- 1 can of pork and beans
- 1 or 2 cans kidney beans
- 1 can green beans
- 1 t. Worcestershire sauce
- 1 t. oregano
Simmer until everything is warm.
(About 8 minutes. )
Can be served with cheese, bread and carrot sticks.
* Tip! Brown several pounds of ground beef, some chopped onion and garlic together, then freeze in small containers to use in fast meals.)

Chunky Junk
( This is fun to make when teaching the “NG” sound as in SING, KING, JUNK. If an “N” is followed by a “K” the “N” has the “NG” sound.)
1. Melt in the micro wave for 1 minutes:
- 20 marshmallows
- ½ cube of butter
- ½ cup of peanut butter
2. Stir and melt for 1 more minute.
3. Mix in:
- 1 cup Oat O’s cereal
- 1 cup Crispy Rice cereal
- 1 cup pretzels
- ½ cup peanuts
- ½ cup raisins
- ½ cup chocolate chips
- ½ cup M & Ms
4. Spread out in buttered pan.
5. Cool and enjoy.
