Ranch Dressing- Simple and Tasty

Ranch Dressing

  •  1 tsp. dry parsley
  •  ½  tsp. garlic powder
  •  1 tsp. salt
  • 1 ½  tsp. instant minced onion
  •  1 tsp. pepper
  • pinch of oregano

Mix spices with 2 cups of buttermilk.  Then add 1½ – 2 cups of mayonnaise. Chill in the refrigerator for 30 min. (Will keep refrigerated for several weeks.)

Sloppy Joes

This is a way to get vegetables in your family.  This recipe is just a guide.  Add any vegetables that need using.

  • Brown 1 lb of ground beef or turkey.
  • Blend or  chop in the blender or food processor 2 cups of vegetables.  Any will do but this is a good mix to start with: 1 onion, 2 celery, 1-2 big carrots, 1 pepper any color.   Add this to the cooked meat.
  • Add 1 cup catsup.
  • Add 2 Tablespoons mustard.
  • Cook down until it thickens.
  • Add a little salt and pepper to taste.  It doesn’t take much because the vegetables are so flavorful.
  • Serve over bread or on buns with cheese and raw vegetables.
  • It is yummy and easy.

This can be made into large batches and feed a crowd.

Spaghetti- Ten Minute Meal

Spaghetti   (Tenth of 10 Ten Minute Meals)

Spaghetti Seasoning:  (This can be made ahead and kept in small bags or foil to make an even faster meal.)

  •    2 tbsp. instant minced onion
  •    2 tsp. salt
  •    1/4 tsp. pepper
  •    1 tsp. oregano
  •    1 tsp. basil
  •    1 tbsp. sugar or honey
  •    1/8 tsp. cinnamon
  •    ½  tsp. garlic powder
  •    ½  tsp. thyme

Cook pasta.

While the pasta is cooking brown ½  lb. of ground meat.

Then add 1 small can of tomato paste, 1 small can of tomato sauce, 3 cans of water, a little lemon juice, and spaghetti seasoning.

Simmer about 8 min. Add 2-3 Tbs. grated parmesan.

Serve over pasta.

Stir-Fry- Ten Minute Meal

Stir-Fry  (Ninth of 10 Ten Minute Meals)

Cook rice, linguine, or angel hair pasta with salt, while the stir-fry is cooking.  When it is cooked drain and add a little olive oil.

Stir-Fry

  • Cut 1 or 2 chicken breasts or thighs into medium-size pieces. (Can use pork, or beef.)
  • Start browning chicken in olive oil in a large frying pan.
  • Add about  ½  of an onion, chopped and cover with a lid and cook over medium heat for 1-2 min.
  • Add 2 or 3 thinly sliced carrots, cover and cook for about 2 more minutes.
  • Then add broccoli,  sliced zucchini and/or any other veggies, cover and cook for about 2 more minutes.
  • Add seasoning to taste.
  • After about 2 minutes add 1 cup of cold chicken broth or water mixed with 2 T. of corn starch and 1 T. soy sauce.  Cook, stirring often, until sauce thickens.  (1 or 2 minutes) If it doesn’t thicken add a little more corn starch mixed with a little cold water.
  • Serve on drained pasta or rice and dinner is ready.

Note:  It is also good served without pasta or rice.

Taco Salad- Ten Minute Meal

Taco Salad (Eighth of 10 Ten Minute Meals)

  • Cook cut up chicken or ground beef in taco seasoning (below) or use leftover chicken.
  • Cut lettuce, tomatoes, onions.
  • Cut avocados.
  • Grate cheese.
  • Can of drained olives.
  • Can of drained beans (black or kidney).
  • Tortilla Chips

Mix all together in a large bowl with:

Taco Ranch Dressing  

  •  1 cup ranch dressing   (Our blog has a home made recipe of Ranch Dressing.)  (Can substitute plain yogurt and spices for ranch dressing.)
  •  1 T. catsup
  •  2 T. salsa.

Taco Seasoning Cook 1 – 2 lbs. of ground beef or chicken then add seasoning and water.

  • 2 tsp. instant minced onion
  • 1 tsp. salt
  • 1 tsp. chili powder
  • ½  tsp. corn starch
  • ½  tsp. garlic powder
  • ½  tsp. ground cumin
  • 1/4 tsp. dried oregano
  • ½  tsp. crushed dried red pepper
  • Add ½  cup of water

Simmer until the water is cooked out.

Milk Sauce/Gravy/Soup- Ten Minute Meal

Creamy Milk Sauce/Gravy/Soup/Rue (Seventh of 10 Ten Minute Meals)

If you learn to make a Rue it can save you money and time.  Use it anytime you would use a can of creamed soup.  It is better for your health, saves you money, and tastes great.   It will make you holiday meals the best.  Be brave.  Don’t worry if you have a few lumps the first time, it will still taste great.

If you use it in a recipe instead of a can of creamed soup, use only half of the liquid.

  • Melt 2 Tbs. butter or other fat in frying pan.
  • Add 2-3 Tbs. flour and brown for 1-2 minutes on medium heat.
  • Add 2 cups of a mixture of milk, water and/or broth.
  • Season with salt/pepper and spices to taste.
  • Stir until thick.
  • Turn the heat off and add 2-4 Tbs. of grated parmesan cheese.

Hamburger Gravy

Add cooked ground beef to the gravy and serve over toast, noodles, rice, or potatoes.

Veggie Gravy

  • Add steamed asparagus or other cooked vegetables and serve over toast.
  • Add some cooking water to the sauce to make the right thickness.

Creamed Soup

  •  Cook any vegetables like carrots, potatoes, broccoli, onions, etc.
  •  Drain and save the water to use to thin the soup.
  • Add the creamed sauce.
  • Add the reserved water to make the soup the right thickness.

This can be used to make chicken pot pie, potato soup, stroganoff and so much more.  Let us know how you use a rue to make your meals great.

Seven Layer Burritos (Ten Minute Meal)

7 Layer Burritos (Sixth of 10 Ten Minute Meals)

  • Cook Rice-A-Roni or some other seasoned rice.
  • Warm refried beans.
  • Mash avocados and mix in a little lime or lemon  juice and season with Spike or other seasoning.
  • Cut up tomatoes, onions and lettuce.
  • Slice a can of olives.
  • Grated cheese.
  • Salsa.
  • Sour cream.
  • Warm tortillas.  (Corn or Flour)

Layer everything on the tortilla, starting with  the beans, then fold up into a burrito and eat.  Everyone can put on what they like.  Great fast, meatless meal.

Ham and Cheese Angel Hair (Ten Minute Meal)

Ham and Cheese Angel Hair (Fourth of 10 Ten Minute Meals)

  • Cook 3/4 of a pound of angel hair pasta or other pasta.
  • Drain the pasta, but don’t rinse.
  • Put 1 cup of grated medium cheddar cheese, and 1 cup of milk in the hot pan over medium heat stir and melt the cheese.
  • Add ½ precooked diced ham steak (or leftover ham), and cooked pasta.
  • Salt and pepper to taste.
  • Mix all together.
  • Heat on low for about one more minute.
  • Serve with salad and fruit.

Fast Chili (Ten Minute Meal)

Fast Chili  (Third of 10 Ten Minute Meals)  This can be used in many simple meals.

  • Brown 1/2 –1 lb of ground beef with onion and garlic.
  • Add 1 or 2 cans of chili beans and heat and serve. (Can use any beans seasoned with chili powder, cumin, garlic instead of chili beans. )

Can be enjoyed with toast, crackers, cheese, and/or veggies.

Use Chili to make any of these fast meals and snacks:

Chili Cheese Chip

  • Put chips on a plate,
  • Sprinkle grated cheese on top,
  • Put chili on top.
  • Microwave until warm.

Chili Cheese Dip

  • Microwave heat on low in a pan, one cup of grated cheese and about 1 cup of chili for 1 minute.
  • Stir and serve with chips.

Chili Quesadilla

  • Butter a frying pan.
  • Put in a tortilla,
  • then grated cheese ,
  • then top with another tortilla.
  • Then brown on both sides.
  • Top the quesadilla with warm chili.

Baked Potato Bar

  • Bake potatoes in microwave (9 min) or oven.
  • Steam broccoli.
  • Warm chili.
  • Cut up cooked ham or cook and crumble bacon.
  • Grate cheese.
  • Serve with butter, sour cream, salt and pepper.
  • Pile on potatoes and enjoy.

Breakfast Sandwiches (Ten Minute Meal)


Breakfast Sandwiches   (Second of 10 Ten Minute Meals)

 

 

Brown bacon, ham or sausage.

Toast bread

Fry 1 or 2 eggs per sandwich.   (When cooking eggs use a lid to help steam the eggs.)

Put a small slice of cheese (any kind) on the eggs during the last minute of cooking.

Slice tomatoes.

Put cream cheese, mayo or butter on the toast.

Put sandwich together in this order:

  •   Toast
  •   2 eggs with cheese melted on
  •   Sliced tomatoes, salt and pepper
  •   Meat
  •   Toast

Can be served with milk, fruit or juice.

This makes a great dinner or brunch.
